  • 1 cup wild rice
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Preparation
  1. Rinse the wild rice under cold water until the water runs clear.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  3. Add the sliced mushrooms to the pot and cook them for about 5–7 minutes until they are tender and have released their moisture.
  4. Pour in the vegetable broth and add the rinsed wild rice. Bring the mixture to a boil, then lower the heat to a simmer. Cover the pot and cook for about 30-35 minutes or until the wild rice is tender.
  5. Stir in the heavy cream and season with salt and pepper to taste. Let it simmer for an additional 5 minutes to meld the flavors.
  6. Ladle the soup into bowls, garnish it with fresh parsley, and serve hot.

Notes

To lighten the recipe, swap heavy cream with coconut milk or a suitable cream substitute. Be patient while cooking the wild rice, as it takes longer than white rice. Taste and adjust seasoning as necessary. Store in an airtight container in the refrigerator for up to 4-5 days or freeze for up to 3 months. Reheat gently over low heat.
