  1. In a heatproof bowl, melt the chopped white chocolate over a double boiler or in the microwave, stirring until smooth and creamy. Allow it to cool slightly while you prepare the cream.
  2. In a large mixing bowl, combine the heavy cream, sugar, vanilla extract, and a pinch of salt. Use an electric mixer to whip the cream until soft peaks form.
  3. Gently fold one-third of the whipped cream into the melted white chocolate until fully incorporated. Carefully fold in the remaining whipped cream until no white streaks remain.
  4. Spoon the mousse into individual serving cups or a large bowl. Cover and refrigerate for at least 2 hours or until set.

Notes
