Ingredients

Vegetable Ingredients
  • 3 pieces potatoes, peeled and diced
  • 3 pieces carrots, sliced
  • 3 pieces celery stalks, sliced
  • 1 pieces yellow onion, diced
  • 3 cloves garlic, minced
Broth and Cream
  • 4 cups vegetable broth
  • 1 cup heavy cream Can substitute with low-fat cream or coconut milk.
Seasoning and Thickening
  • 3 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 tsp dried thyme
  • 1.5 tsp salt
  • 0.5 tsp black pepper
Garnish
  • 3 tbsp fresh parsley, chopped For garnish.

Method

Preparation
  1. In a large pot, melt the butter over medium heat.
  2. Add the diced onion and minced garlic. Sauté until the onion is translucent, about 5 minutes.
  3. Add the sliced carrots, celery, and diced potatoes to the pot. Cook for about 10 minutes, stirring occasionally, until they start to soften.
  4. Sprinkle the flour over the vegetables and stir well to coat everything. Continue cooking for another minute.
  5. Gradually pour in the vegetable broth while stirring to avoid lumps. Add dried thyme, salt, and black pepper. Bring to a gentle boil.
  6. Reduce the heat and let it simmer for about 15 minutes or until the vegetables are tender.
  7. Remove the pot from heat and let it cool slightly. Blend the soup with an immersion blender until desired creaminess is reached.
  8. Stir in heavy cream until well combined and adjust seasoning if necessary.
  9. Garnish with freshly chopped parsley before serving.
