Ingredients
  

Pasta
  • 8 oz pasta of choice (fettuccine, penne, or spaghetti work great) Use your favorite type of pasta.
Vegetables
  • 2 cups mushrooms, sliced (button or cremini)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
Sauce Ingredients
  • 1 cup vegetable broth
  • 1 cup coconut cream or cashew cream Coconut cream is recommended for a richer flavor.
  • 2 tbsp soy sauce
  • 1 tbsp nutritional yeast Optional, for added flavor.
  • Salt and pepper to taste
Garnish
  • Fresh parsley For garnish.

Method
 

Cooking the Pasta
  1. Start by boiling a large pot of salted water. Add the pasta and cook according to the package instructions until al dente. Once cooked, reserve a cup of pasta water and drain the rest. Set it aside.
Sautéing the Vegetables
  1. In a large skillet over medium heat, add a splash of vegetable broth. When hot, add the chopped onion and sauté for about 3-4 minutes until they turn translucent.
  2. Toss in the minced garlic and sliced mushrooms, cooking for another 5 minutes until the mushrooms soften.
Creating the Sauce
  1. Pour in the vegetable broth, coconut or cashew cream, soy sauce, and nutritional yeast. Stir until well combined and simmer for about 5-7 minutes, allowing the sauce to thicken.
  2. Add salt and pepper to taste.
Combining Pasta and Sauce
  1. Gradually add the cooked pasta into the skillet with the sauce, tossing to coat. If the sauce seems too thick, add some reserved pasta water until you reach the desired consistency.
Serving
  1. Finally, serve the Creamy Vegan Mushroom Stroganoff hot, garnished with fresh parsley. Enjoy this delightful dish with family or friends!

Notes

Substitutions: Feel free to mix and match with your choice of pasta or mushroom varieties! You can easily substitute with gluten-free pasta or add sautéed spinach for extra nutrition. Make sure your ingredients are prepped before cooking to save time. Avoid high heat to prevent the coconut cream from separating.
