  • 4 pieces chicken breasts Boneless and skinless
  • 2 tablespoons olive oil
  • 1 cup heavy cream Or half-and-half for a lighter option
  • 1 cup chicken broth
  • 1 cup sun-dried tomatoes, chopped Drain if packed in oil
  • 3 cups fresh spinach
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • to taste Parmesan cheese for garnish Freshly grated

Method
 

Preparation
  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear for about 5-7 minutes on each side, or until golden brown. Remove from the skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for about 30 seconds, until fragrant.
  4. Add the sun-dried tomatoes and chicken broth to the skillet. Bring it to a simmer, then stir in the heavy cream and Italian seasoning, simmering for another 3-4 minutes.
  5. Gently fold the fresh spinach into the sauce and allow it to wilt for about 2-3 minutes.
  6. Return the seared chicken back into the skillet, cover and let everything simmer together for an additional 5 minutes.
  7. Once cooked through, garnish with freshly grated Parmesan cheese and serve warm.

Notes

Make sure not to overcrowd the skillet when searing the chicken. If necessary, cook in batches for even browning.
