Preparation
- Season the chicken breasts with salt, pepper, and garlic powder on both sides.
- In a large skillet, heat the olive oil over medium heat.
Cooking
- Add the chicken breasts to the hot skillet and cook for approximately 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the spinach and cherry tomatoes. Sauté for about 3 minutes until the spinach wilts and the tomatoes start to soften.
- Pour in the heavy cream and sprinkle in the Italian seasoning. Stir to combine and allow the sauce to simmer for a couple of minutes until it thickens slightly.
- Taste and adjust salt and pepper as needed.
- Return the chicken to the skillet, spoon the creamy sauce over the top, and allow it to incorporate for about 2 minutes.
- Serve hot, garnished with a sprinkle of Parmesan cheese.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. To freeze, use a freezer-safe container for up to 3 months. Reheat on medium heat, adding a splash of milk or water to loosen the sauce.
