  • 1 can diced tomatoes (14.5 oz) With juice

Aromatics

Method
 

Preparation
  1. Season the chicken breasts with salt and pepper and set them aside.
Sauté Aromatics
  1. In a large skillet, heat a drizzle of olive oil over medium heat.
  2. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
Cook Chicken
  1. Increase heat to medium-high and add the chicken breasts to the skillet.
  2. Sear on both sides until golden brown, about 4-5 minutes per side.
Add Tomatoes and Cream
  1. Pour in the can of diced tomatoes with juice and the heavy cream.
  2. Stir in the Italian seasoning and bring to a gentle simmer.
Simmer
  1. Reduce heat to low and let simmer until chicken is cooked through and sauce thickens, approximately 10-15 minutes.
  2. Ensure chicken internal temperature reaches 165°F (75°C).
Adjust Seasoning and Serve
  1. Taste the sauce and adjust seasoning with salt and pepper as needed.
  2. Plate the chicken and drizzle with the creamy tomato sauce.
  3. Pair with rice, pasta, or a fresh salad for a complete meal.

Notes

Leftovers can be stored in an airtight container for up to 3 days, or frozen for up to 2 months. Reheat gently over low heat, adding a splash of broth or cream if needed.
