  • 1 cup jasmine rice Rinsed under cold water
  • 1 can (13.5 oz) coconut milk Use good quality for richer flavor
  • 1 cup water
  • 1 tablespoon sugar Optional, for sweetness
  • 1/2 teaspoon salt
  • 1 tablespoon lime juice For a fresh touch
  • Fresh cilantro for garnishing Optional

Method
 

Preparation
  1. Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine the rinsed rice, coconut milk, water, sugar (if using), and salt. Stir gently.
  3. Place the saucepan on medium heat and bring to a gentle boil. Then lower the heat to maintain a simmer.
  4. Cover the saucepan and let it simmer for 15-20 minutes until the rice absorbs the liquid and is tender.
  5. Remove from heat and fluff the rice with a fork. Drizzle with lime juice.
  6. Serve warm, garnished with fresh cilantro and toasted coconut, if desired.

Notes

Store leftovers in an airtight container for 3-5 days. Reheat gently with a splash of water or coconut milk. Great with stir-fried vegetables, proteins, or as a standalone meal.
