- Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
- In a medium saucepan, combine the rinsed rice, coconut milk, water, sugar (if using), and salt. Stir gently.
- Place the saucepan on medium heat and bring to a gentle boil. Then lower the heat to maintain a simmer.
- Cover the saucepan and let it simmer for 15-20 minutes until the rice absorbs the liquid and is tender.
- Remove from heat and fluff the rice with a fork. Drizzle with lime juice.
- Serve warm, garnished with fresh cilantro and toasted coconut, if desired.
Notes
Store leftovers in an airtight container for 3-5 days. Reheat gently with a splash of water or coconut milk. Great with stir-fried vegetables, proteins, or as a standalone meal.
