  • 1 can chickpeas, drained and rinsed
  • 2 tablespoons tahini
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 clove garlic, minced

  • 2 cups mixed veggies (e.g., bell peppers, zucchini, carrots) Cut into bite-sized pieces.

Method
 

Preparation
  1. Start by washing and slicing your chosen mixed veggies into uniform bite-sized pieces.
  2. In a mixing bowl, whisk together the tahini, lemon juice, olive oil, minced garlic, salt, and pepper until smooth. If the dressing is too thick, add a splash of water to reach your desired consistency.
Cooking
  1. In a non-stick skillet, add a teaspoon of olive oil over medium heat. Sauté the chopped mixed veggies for about 5-7 minutes, stirring occasionally, until they are tender but still crisp.
  2. In a large bowl, toss the sautéed veggies with the drained chickpeas and the tahini dressing, making sure everything is well coated for maximum flavor.
Serving
  1. Transfer the mixture to a serving dish and garnish with fresh herbs. Enjoy immediately or let it sit to allow the flavors to meld!

Notes

Substitutions: Almond butter or sunflower seed butter can be used instead of tahini. Ensure to sauté veggies just enough to retain their crunch; overcooking will lead to a mushy texture.
