- In a large pot over medium heat, add the halāl Italian sausage. Cook for about 5-7 minutes until browned, breaking it apart as it cooks.
- Add the diced onion and minced garlic, cooking until the onion is translucent.
Cooking
- Pour in the chicken broth and the can of diced tomatoes. Stir well to combine all those savory flavors.
- Increase the heat slightly, allowing the mixture to come to a gentle boil. This usually takes about 5 minutes.
- Add the cheese tortellini to the pot. Cook according to package instructions, usually about 3-4 minutes, until they float to the top.
- Lower the heat to medium-low, stir in the heavy cream, and toss in the fresh spinach. Let it simmer for another 2-3 minutes until the spinach wilts and the soup is heated through.
- Taste and adjust seasoning with salt and pepper as needed. Ladle into bowls and top with freshly grated Parmesan cheese before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze without heavy cream and spinach. Reheat on the stove and add cream and spinach before serving for freshness.
