  • 1 pound ground beef can substitute with ground turkey or chicken
  • 1 can (10 oz) Rotel diced tomatoes with green chilies
  • 1 cup heavy cream
  • 2 cups uncooked pasta (elbow noodles) works great
  • 1 cup shredded cheese (cheddar or a blend) Experiment with different cheeses for variety
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper to taste
  • 1 tablespoon olive oil
  • optional Fresh cilantro or parsley for garnish

  1. Begin by boiling salted water in a large pot. Add the uncooked pasta and cook according to the package instructions until al dente. Drain and set aside.
  2. In the same pot, heat the olive oil over medium heat. Add the ground beef, cooking until browned (about 5-7 minutes). Drain excess fat if necessary.
  3. Stir in the can of Rotel tomatoes, including the juice, followed by the garlic powder and onion powder. Allow it to simmer for a few minutes so the flavors meld.
  4. Pour in the heavy cream and mix well, allowing the sauce to thicken slightly.
  5. Add the cooked pasta to the pot and toss everything together until the pasta is well-coated.
  6. Sprinkle shredded cheese over the pasta mixture and stir until melted and creamy. Season with salt and pepper to taste.
  7. Garnish with fresh cilantro or parsley if desired, and enjoy your deliciously creamy Rotel pasta!

Notes

For extra heat, consider adding jalapeƱos or a dash of hot sauce to the mix. Ensure you taste as you go and adjust seasoning accordingly.
