Ingredients

Main Ingredients
  • 4 large large potatoes, peeled and diced
  • 1 cup onion, chopped
  • 4 cups vegetable broth
  • 1 cup milk Use skim or non-dairy alternative for a lighter version.
  • Salt and pepper to taste
  • Chives for garnish

Method

Preparation
  1. Start by peeling and dicing the potatoes and chopping the onion.
Cooking
  1. In a large pot, add the diced potatoes, chopped onion, and vegetable broth. Bring the mixture to a boil over medium-high heat.
  2. Once boiling, reduce the heat and let it simmer for about 15 minutes, or until the potatoes are tender.
  3. Using a potato masher, mash the soup to your desired consistency, or use an immersion blender for a smoother texture.
  4. Stir in the milk, and season with salt and pepper to taste. Heat through.
  5. Ladle the soup into bowls and garnish with fresh chives. Enjoy warm!

Notes

For serving, pair the soup with a crisp salad or fresh bread. Consider adding grilled cheese sandwiches for a heartier meal. Avoid overcooking the potatoes to prevent mushiness.
