Preparation
- Season both sides of the chicken breasts generously with salt and pepper.
Cooking
- In a large skillet, heat the olive oil over medium-high heat.
- Once hot, add the chicken breasts and sear for about 6-7 minutes on each side, until golden brown and cooked through.
- Remove them from the skillet and set aside.
- In the same skillet, reduce the heat to medium and add in the minced garlic. Sauté for about 30 seconds until fragrant—be careful not to burn it!
- Pour in the heavy cream and then add the pesto sauce. Stir continuously until the mixture is well combined and bubbling gently.
- Lower the heat and add the cooked chicken breasts back into the skillet. Spoon sauce over the top.
- Let it simmer for another 2-3 minutes to soak up all the flavors!
- Sprinkle the grated Parmesan cheese over the chicken, allowing it to melt into the sauce for that creamy finish.
- Plate the chicken, drizzling the sauce generously over the top, and serve it with your choice of sides such as pasta, rice, or a fresh salad.
Notes
Substitutions for the cream can include half-and-half and whole milk or Greek yogurt for a healthier option. Ensure to not overcook the chicken and incorporate the pesto sauce thoroughly.
