  • 2 large Cucumbers Select firm cucumbers for best texture
  • 1 cup Plain yogurt
  • 2 tablespoons Lemon juice Freshly squeezed preferred
  • 2 tablespoons Fresh dill, chopped Can substitute with parsley or mint
  • 1 clove Garlic, minced
  • Salt and pepper to taste

Method
 

Preparation
  1. Peel the cucumbers if preferred, then slice them into thin rounds or half-moons.
  2. In a separate bowl, mix the plain yogurt, lemon juice, chopped dill, and minced garlic to create the dressing.
  3. Toss the sliced cucumbers in the creamy dressing until they’re nicely coated.
  4. Add salt and pepper to taste, adjusting according to your preference.
  5. Let it sit in the fridge for at least 10 minutes before serving to allow the flavors to meld together.
  6. Enjoy the salad fresh, garnished with a sprinkle of extra dill if desired!

Notes

For an extra zing, consider adding a splash of vinegar to the dressing. The salad can be served alongside grilled chicken, hearty sandwiches, or roasted vegetables. Leftovers can be stored in an airtight container in the refrigerator for up to 2-3 days.
