  • 2 large cucumbers English or Persian cucumbers are recommended for best texture
  • 1/2 cup sour cream or Greek yogurt Use Greek yogurt for a lighter option
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon fresh dill or 1 teaspoon dried dill
  • to taste salt and pepper
  • optional chopped red onion or garlic for an extra kick

Method
 

Preparation
  1. Wash the cucumbers thoroughly and slice them thinly. You may peel them or leave the skin on.
  2. In a bowl, combine sour cream (or Greek yogurt), apple cider vinegar, fresh dill, salt, and pepper. Mix until well blended and creamy.
  3. In a large bowl, add the sliced cucumbers and pour the dressing over them. Gently toss to coat each slice in the creamy dressing.
  4. Let the salad sit for about 10 minutes in the refrigerator before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Consume leftovers for maximum flavor. Combine dressing separately before serving to maintain cucumber crunch.
