Base Ingredients
  • 1 cup cottage cheese Choose a smooth variety for a creamier texture.
  • 1/4 cup unsalted butter
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
Seasoning
  • 1/4 teaspoon ground nutmeg
  • to taste salt
  • to taste pepper
  • 1/4 cup milk (optional for thinning) Add gradually to achieve desired consistency.

Preparation
  1. In a blender or food processor, combine the cottage cheese, butter, garlic, and Parmesan cheese. Blend until smooth and creamy, ensuring there are no lumps.
Cooking
  1. Transfer the mixture to a saucepan. Stir in the ground nutmeg, salt, and pepper.
  2. Gently heat the sauce over low heat, stirring frequently to avoid sticking. If you prefer a thinner consistency, add the milk a little at a time until you reach your desired texture.
  3. Once warm, pour over your favorite pasta, toss to coat, and serve immediately.

Notes

Best served fresh over hot pasta. If it thickens after cooling, reheat gently and add a splash of milk to loosen it up. Leftovers can be stored in an airtight container for up to 3 days, or frozen for up to a month.
