  • 2 tablespoons curry powder
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced

  • Fresh cilantro for garnish

  1. Begin by peeling and deveining the shrimp. Make sure they are clean and ready to go. Set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant (about 1-2 minutes).
  3. Toss in the shrimp, cooking until they turn pink and opaque (about 2-3 minutes). Be careful not to overcook them!
  4. Pour the coconut milk into the skillet and stir in the curry powder. Let it simmer gently for about 5 minutes, allowing the flavors to meld together beautifully.
  5. Add salt and pepper to taste. Give it a final stir and adjust seasoning according to your preference.
  6. Serve hot, garnished with fresh cilantro for a pop of color and flavor.
  7. Pair with steamed rice or your favorite side, and dig in!

Notes

Feel free to substitute shrimp with chicken or tofu. Keep an eye on the shrimp while cooking—they cook quickly! Be cautious with adding salt early in the cooking process.
