  • 2 cups cooked chicken, shredded You can use store-bought rotisserie chicken for convenience.
  • 1 cup uncooked rice
  • 1 can cream of chicken soup
  • 2 cups chicken broth
  • 1 cup milk
  • 1 cup frozen mixed vegetables
  • to taste Salt and pepper
Optional Topping
  • 1 cup shredded cheddar cheese Optional, for a cheesy topping.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked chicken, uncooked rice, cream of chicken soup, chicken broth, milk, and frozen mixed vegetables. Stir until well mixed, adding salt and pepper to taste.
  3. Transfer the mixture into a greased 9x13-inch baking dish, leveling it out evenly.
Baking
  1. Cover the dish with aluminum foil and bake in the preheated oven for about 45 minutes.
  2. Remove the foil, sprinkle shredded cheddar cheese on top if desired, and bake for an additional 10-15 minutes or until the cheese is melted and bubbly.
  3. Let it cool for a few minutes before serving to set everything nicely.

Notes

For substitutions, turkey or tofu can be used in place of chicken. Ensure to check rice for doneness and adjust baking time as needed. Proper storage involves refrigerating in an airtight container for up to 3-4 days or freezing for up to 3 months. Reheat in the oven covered with aluminum foil.
