Preparation
  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic, stirring frequently, until they become fragrant and the onion turns translucent, about 3-5 minutes.
  2. Toss in the sliced carrots and celery. Stir the mixture together for an additional 4-5 minutes to soften the vegetables slightly.
  3. Pour in the chicken broth and bring the mixture to a gentle simmer. Add the shredded chicken to the pot, allowing it to mingle with the flavorful broth.
  4. Carefully add the egg noodles, stirring intermittently. Let this simmer for another 7-8 minutes, or until the noodles are cooked al dente.
  5. Turn the heat down to low and stir in the heavy cream. Season with salt and pepper to taste. Allow the soup to heat through for about 3-4 more minutes.
