  • 1 package (16 oz) gnocchi Gnocchi cooks quickly; follow package instructions
  • 1 cup heavy cream Adds creaminess
  • 2 cups spinach Provides nutrients and color

Method
 

Preparation
  1. In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery; cook until they begin to soften, about 5-7 minutes.
  2. Stir in the minced garlic, thyme, and rosemary, cooking for an additional minute until fragrant.
Cooking
  1. Pour in the chicken broth and bring it to a gentle boil.
  2. Add the shredded cooked chicken into the pot.
  3. Once boiling, add in the gnocchi. Cook according to package instructions until they float to the top, typically 2-3 minutes.
  4. Lower the heat and stir in the heavy cream and spinach. Allow to cook for another 2-3 minutes, until the spinach wilts.
  5. Season with salt and pepper to taste.
Serving

Notes

For a lighter option, consider using low-fat milk instead of heavy cream. For a vegetarian version, substitute cooked chicken with chickpeas or additional veggies. Ensure all ingredients are Halal-compliant. Avoid overcooking the gnocchi to prevent mushiness.
