  • 2 cups cooked chicken, shredded Feel free to use rotisserie chicken or leftovers.
  • 1 cup cottage cheese Preferably low-fat.
  • 1 cup shredded cheese Mexican blend or cheddar works great.
  • 1 medium bell pepper, diced Any color.
  • 1 medium onion, diced
  • 2 tablespoons fajita seasoning Store-bought or homemade.
  • 1 cup corn Canned or frozen.
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh cilantro for garnish Optional.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, cottage cheese, diced bell pepper, diced onion, corn, fajita seasoning, garlic powder, salt, and black pepper. Mix until well combined.
  3. Pour the mixture into a greased casserole dish, spreading it out evenly. Sprinkle the shredded cheese on top.
Baking
  1. Place the dish in the preheated oven and bake for 30–35 minutes, or until the cheese is melted and bubbly.
  2. Let it cool for a few minutes before garnishing with fresh cilantro. Serve hot and enjoy.

Notes

For a healthier twist, consider using Greek yogurt instead of cottage cheese. Do not overbake to maintain the melted cheese texture. Ensure proper seasoning with the fajita seasoning for flavor balance. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for about 2 months. Reheat at 350°F for about 20 minutes.
