Preparation
- Preheat your oven to 350°F (175°C), preparing your baking dish.
- If not already cooked, prepare the rice according to package instructions and set aside.
Mixing
- In a large mixing bowl, combine the shredded chicken, cooked rice, chicken broth, creamy queso cheese sauce, mixed vegetables, garlic powder, onion powder, salt, and pepper. Stir until everything is well combined.
Baking
- Pour the mixture into a greased casserole dish, smoothing the top to ensure even cooking.
- Cover with foil and bake in the preheated oven for 30 minutes.
- After 30 minutes, remove the foil and sprinkle with your favorite toppings.
- Return to the oven and bake uncovered for an additional 10-15 minutes or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving. Enjoy!
Notes
Store leftovers in an airtight container in the fridge for up to 3-4 days. To reheat, microwave with a damp paper towel on top for 2-3 minutes. This dish can also be frozen for up to 2 months.
