Base Ingredients
  • 2 cups water For mixing with gelatin and heating
  • 1 package (3 oz) caramel-flavored gelatin Main flavor base
  • 1 cup unsweetened protein powder (vanilla or caramel flavor) For added protein
  • 1 cup heavy cream (or coconut cream for a dairy-free option) Adds creaminess to the jello
  • 1/2 cup sugar Sweetness may be adjusted to taste
  • 1 teaspoon vanilla extract Enhances flavor
  • 1/2 cup cold water Used to blend the gelatin

Method
 

Preparation
  1. In a bowl, mix 1/2 cup of cold water with the caramel-flavored gelatin. Let it sit for about 5 minutes until it blooms.
  2. In a saucepan over medium heat, combine 2 cups of water with the sugar. Stir until dissolved. Add the bloomed gelatin mixture and continue to stir until fully dissolved. Remove from heat.
  3. In a separate bowl, mix together the protein powder, heavy cream, and vanilla extract. Gradually pour this mixture into the gelatin while stirring to keep it smooth.
  4. Pour the mixture into individual serving cups or a jelly mold. Cover and refrigerate for at least 2 hours or until fully set.
  5. Once the jello has set, serve fresh with your favorite toppings like nuts or whipped cream!

Notes

For a lighter version, use coconut cream instead of heavy cream. Adjust the sweetness by adding more or less sugar before chilling, and allow ample time in the fridge for the jello to set!
