  • 1 lb chicken breast, cooked and shredded Pre-cooked chicken can be used for convenience.
  • 1 cup pasta (rotini or penne) These types work best for this soup.
  • 4 cups chicken broth
  • 1 cup heavy cream Can substitute with half-and-half or plant-based cream for a lighter version.
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons Cajun seasoning
  • to taste Salt
  • to taste Pepper
  • as needed Chopped green onions for garnish

Cooking Steps
  1. In a large pot, place your shredded chicken and heat it over medium heat until warmed through if pre-cooked.
  2. Add diced onion, bell pepper, and minced garlic to the pot. Sauté for about 3-5 minutes until the vegetables are tender and fragrant.
  3. Pour in the chicken broth, stirring well to combine with the sautéed vegetables.
  4. Add in the pasta and bring the mixture to a gentle boil. Cook according to package instructions (usually about 8-10 minutes) until al dente.
  5. Reduce the heat to low, then stir in the heavy cream and Cajun seasoning, mixing until well combined and let it simmer for an additional 2-3 minutes.
  6. Taste and adjust seasoning with salt and pepper as needed. Ladle the soup into bowls and garnish with chopped green onions.

Notes

For stove reheating leftovers, add a splash of additional broth or cream to maintain texture. Store any leftovers in an airtight container in the fridge for 3-4 days or freeze portions for up to 3 months.
