  • 2 pieces boneless, skinless chicken breasts
  • 12 oz fettuccine or penne pasta
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 piece bell pepper, sliced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 tablespoon Cajun seasoning (or to taste)

Method
 

Cooking the Pasta
  1. Begin by boiling a large pot of salted water. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
Sautéing the Chicken
  1. In a large skillet, heat olive oil over medium-high heat. Season the chicken breasts with salt, pepper, and 1 teaspoon of Cajun seasoning. Cook the chicken for about 6-7 minutes on each side or until cooked through. Remove from the pan and let it rest before slicing.
Preparing the Veggies
  1. In the same skillet, add the chopped onion and bell pepper. Sauté for about 3-4 minutes until tender. Add garlic and cook for an additional minute.
Making the Sauce
  1. Pour in the chicken broth and heavy cream, stirring to combine. Add the remaining Cajun seasoning and season with salt and pepper to taste. Let the sauce simmer for 5-8 minutes until it thickens slightly.
Combining and Serving
  1. Add the cooked pasta to the skillet and toss to coat. Slice the chicken and arrange it on top. Serve with grated Parmesan cheese and a sprinkle of fresh parsley if desired.

Notes

For best results, adjust spice levels to your preference, use quality ingredients, and don't rush the sauce cooking to develop richer flavors. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
