Preparation
- Preheat your oven to 350°F (175°C).
- In a skillet, brown the ground beef over medium heat. Drain any excess fat and stir in the taco seasoning according to the packet instructions.
- In a large mixing bowl, combine the cooked meat, black beans, rice, corn, diced tomatoes, and half of the shredded cheese. Mix well!
Assembly and Baking
- In a greased baking dish, layer half of the tortillas on the bottom.
- Pour in the meat mixture, then spread the cream or sour cream evenly over the top.
- Sprinkle with the remaining cheese.
- Layer the remaining tortillas on top, cover with aluminum foil, and bake for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes until bubbly and golden brown.
- Once done, let it cool slightly before garnishing with chopped green onions. Serve warm and enjoy!
Notes
Feel free to switch up the protein; shredded chicken or a meat-free option works well too. Prepare the casserole a day ahead and refrigerate for convenience.
