Ingredients
  

Main Ingredients
  • 1 lb ground beef (or turkey) Use your preferred protein
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup cooked rice
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup corn, frozen or canned
  • 1 cup shredded cheese (cheddar or Mexican blend) Divided
  • 1 cup cream or sour cream
  • 1 packet taco seasoning
  • 1/2 cup green onions, chopped (for garnish)
  • about 6 Flour or corn tortillas

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, brown the ground beef over medium heat. Drain any excess fat and stir in the taco seasoning according to the packet instructions.
  3. In a large mixing bowl, combine the cooked meat, black beans, rice, corn, diced tomatoes, and half of the shredded cheese. Mix well!
Assembly and Baking
  1. In a greased baking dish, layer half of the tortillas on the bottom.
  2. Pour in the meat mixture, then spread the cream or sour cream evenly over the top.
  3. Sprinkle with the remaining cheese.
  4. Layer the remaining tortillas on top, cover with aluminum foil, and bake for 25 minutes.
  5. Remove the foil and bake for an additional 10-15 minutes until bubbly and golden brown.
  6. Once done, let it cool slightly before garnishing with chopped green onions. Serve warm and enjoy!

Notes

Feel free to switch up the protein; shredded chicken or a meat-free option works well too. Prepare the casserole a day ahead and refrigerate for convenience.
