  1. Begin by washing and dicing your potatoes and chopping your onion.
Cooking
  1. In a large pot, heat the olive oil over medium heat. Add in the beef sausage and cook until browned, about 5-7 minutes.
  2. Stir in the chopped onion and minced garlic. Sauté for another 3-4 minutes, or until the onions are translucent.
  3. Pour in the beef broth and add the diced potatoes to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15 minutes, or until the potatoes are tender.
  4. Once the potatoes are cooked, stir in the heavy cream. Season with salt and pepper to taste, and allow it to heat through for an additional 2-3 minutes.
