  • 1 pound beef (ground or diced) Make sure to choose Halal-certified ground beef for this recipe!
  • 1 package gnocchi (typically 16 ounces)
  • 2 cups pumpkin puree (canned or fresh)
  • 1 cup heavy cream
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • Parmesan cheese (for serving)
  • Fresh parsley (for garnish)

Method
 

Cooking the Beef
  1. In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula, for about 5-7 minutes. Drain any excess fat.
Sautéing Aromatics
  1. Add the chopped onion and minced garlic to the skillet. Sauté until the onion becomes translucent, about 3-4 minutes.
Making the Cream Sauce
  1. Reduce the heat to low, then stir in the pumpkin puree and heavy cream. Mix well, allowing the flavors to meld together for about 4-5 minutes.
  2. Add Italian seasoning, salt, and pepper to taste. Stir and let it simmer for another 2-3 minutes.
Cooking the Gnocchi
  1. In a separate pot, boil water and cook gnocchi according to package instructions (usually around 2-3 minutes). Once they float to the surface, they’re done!
Combining Ingredients
  1. Drain the gnocchi and add them to the skillet with the creamy meat sauce. Gently toss everything together until the gnocchi are coated in the delightful sauce.
Serving
  1. Dish the gnocchi into bowls and top with freshly grated Parmesan cheese and parsley for a touch of elegance.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze for up to 2 months. To reheat, gently warm in a saucepan over low heat, adding a splash of extra cream or broth for a creamy texture.
