  • 2 cups cream cheese (softened) Make sure it’s softened to avoid lumps.
  • 1 cup powdered sugar
  • 1 teaspoon almond extract Elevates the flavor.
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream Whip until stiff peaks form.
  • 1 cup crushed almonds Can substitute with other nuts.
  • 1 piece pre-made graham cracker crust Store-bought or homemade.

Preparation
  1. Begin by softening the cream cheese in a mixing bowl. Use an electric mixer to beat it until it’s creamy and smooth, with no lumps.
  2. Gradually incorporate powdered sugar, almond extract, and vanilla extract. Blend until well combined for about 1-2 minutes.
  3. In a separate bowl, whip the heavy cream until it forms stiff peaks. Be careful not to overwhip it!
  4. Gently fold the whipped cream into the cream cheese mixture. Fold in the crushed almonds, being careful to maintain a light and airy texture.
  5. Transfer the mixture into the pre-made graham cracker crust, smoothing it out evenly with a spatula.
  6. Cover and refrigerate for at least 4-6 hours or until set. Overnight is even better if you can wait!
  7. Once set, slice and enjoy! You can garnish with extra crushed almonds or fruits if desired.

Notes

To keep your cheesecake fresh, store it in the refrigerator, wrapped tightly with plastic wrap. It lasts about 4-5 days. Best enjoyed cold or slightly warmed.
