  • 1 cup butter, softened Make sure it is softened but not melted.
  • 1 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour Can be substituted with gluten-free flour.
  • 1 teaspoon baking powder For leavening.
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream the softened butter and sugar using a hand mixer on medium speed for about 2-3 minutes until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually add the dry mixture to the wet mixture, stirring until just combined.
  6. Use a cookie scoop or tablespoon to drop cookie dough onto an ungreased baking sheet, spacing them about 2 inches apart.
  7. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  8. Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to 5 days or freeze for up to 2 months. For a thicker cookie, chill the dough for about 30 minutes before baking.
