Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream the softened butter and sugar using a hand mixer on medium speed for about 2-3 minutes until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add the dry mixture to the wet mixture, stirring until just combined.
- Use a cookie scoop or tablespoon to drop cookie dough onto an ungreased baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack.
Notes
Store cookies in an airtight container at room temperature for up to 5 days or freeze for up to 2 months. For a thicker cookie, chill the dough for about 30 minutes before baking.
