For the Blackberry Compote
  • 1 cup fresh blackberries Can substitute with other berries if desired.
  • ½ cup sugar Used to sweeten the compote.
  • 2 tablespoons water Helps to cook down the berries into a sauce.

Method

Preparation
  1. In a mixing bowl, beat the softened cream cheese with the vanilla extract until smooth and creamy. Set aside.
  2. Take one slice of bread and spread a generous amount of the cream cheese mixture on it. Top with another slice of bread to assemble the sandwich. Repeat with the remaining slices.
Cooking
  1. In another bowl, whisk together the eggs, milk, cinnamon, and sugar until well combined.
  2. Heat a skillet or griddle over medium heat and add a little butter. Dip each cream cheese sandwich in the egg mixture, ensuring both sides are fully coated before placing them on the skillet.
  3. Cook on medium heat for 2-3 minutes on each side or until golden brown. Remove from skillet and keep warm.
