Method
Preparation
- In a mixing bowl, beat the softened cream cheese with the vanilla extract until smooth and creamy. Set aside.
- Take one slice of bread and spread a generous amount of the cream cheese mixture on it. Top with another slice of bread to assemble the sandwich. Repeat with the remaining slices.
Cooking
- In another bowl, whisk together the eggs, milk, cinnamon, and sugar until well combined.
- Heat a skillet or griddle over medium heat and add a little butter. Dip each cream cheese sandwich in the egg mixture, ensuring both sides are fully coated before placing them on the skillet.
- Cook on medium heat for 2-3 minutes on each side or until golden brown. Remove from skillet and keep warm.
Compote Preparation
- In a small saucepan, combine blackberries, sugar, and water over medium heat. Stir gently and cook for about 5 minutes until the berries break down and the sauce thickens slightly.
Serving
- Plate the stuffed French toast, drizzle with blackberry compote, and enjoy your delicious creation!
Notes
Adjust the sweetness according to your taste. Feel free to experiment with flavors by adding lemon zest or mixing different berries in the compote. Store leftovers in an airtight container in the refrigerator for up to 3 days.
