  • 2 large Flour Tortillas
  • 8 oz Cream Cheese, softened Use regular or low-fat cream cheese
  • 1 tsp Garlic Powder Adjust to taste
  • 1 cup Fresh Spinach, chopped You can substitute with lettuce if preferred
  • 1 cup Bell Peppers, finely diced Use a mix of colors for variety
  • ½ cup Chives or Green Onions, chopped
  • Salt and Pepper, to taste Add as needed

Preparation
  1. In a bowl, combine the softened cream cheese, garlic powder, salt, and pepper. Mix until smooth and well blended.
  2. Spread an even layer of the cream cheese mixture over the surfaces of the flour tortillas, making sure to cover them completely.
  3. Evenly distribute the chopped spinach, diced bell peppers, and chopped chives over the cream cheese. Press down gently to help the vegetables adhere.
  4. Starting from one end, carefully roll each tortilla tightly. Ensure that the fillings stay inside as you roll.
  5. Once rolled, use a sharp knife to slice the roll-up into bite-sized pinwheels, about 1-2 inches wide.
  6. Arrange your Cream Cheese Roll-Ups on a plate or platter, and enjoy immediately or refrigerate until ready to serve.

Notes

For variations, you can swap out the veggies for your favorites such as avocados, cucumbers, or olives. They can be prepared ahead of time and stored in the refrigerator for up to three days. Serve with fresh vegetables and hummus, iced tea, or lemonade.
