Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, beat the softened cream cheese and butter together until smooth and creamy.
- Gradually add the granulated sugar to the cream mixture, mixing until light and fluffy.
- Add the egg and mix until well combined.
- Stir in the vanilla extract and lemon zest.
- In a separate bowl, mix together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the creamy mixture and mix until just combined.
Baking
- Use a cookie scoop or a tablespoon to drop rounded mounds of dough onto baking sheets lined with parchment paper, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
- Dust with powdered sugar if desired.
Notes
Store cookies in an airtight container at room temperature for up to 5 days or freeze them for up to 3 months. To reheat, thaw at room temperature or microwave for 10-15 seconds.
