Ingredients
  

For the Cookie Dough
  • 1 cup cream cheese, softened Can substitute with plain Greek yogurt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest (from about 1 lemon) Use a fine grater for best flavor
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
Optional Topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, beat the softened cream cheese and butter together until smooth and creamy.
  3. Gradually add the granulated sugar to the cream mixture, mixing until light and fluffy.
  4. Add the egg and mix until well combined.
  5. Stir in the vanilla extract and lemon zest.
  6. In a separate bowl, mix together the flour, baking powder, and salt.
  7. Gradually add the dry ingredients to the creamy mixture and mix until just combined.
Baking
  1. Use a cookie scoop or a tablespoon to drop rounded mounds of dough onto baking sheets lined with parchment paper, spacing them about 2 inches apart.
  2. Bake for 10-12 minutes or until the edges are lightly golden.
  3. Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
  4. Dust with powdered sugar if desired.

Notes

Store cookies in an airtight container at room temperature for up to 5 days or freeze them for up to 3 months. To reheat, thaw at room temperature or microwave for 10-15 seconds.
