For the Crumb Topping
  • 1/2 cup brown sugar Provides a rich sweetness.
  • 1/2 cup oats Adds texture to the topping.
  • 1/2 cup flour Used to bind the crumb topping.
  • 1/4 teaspoon cinnamon Adds warmth and spice.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, beat the softened cream cheese and butter together until smooth and creamy.
  3. Gradually incorporate the sugar, followed by the eggs one at a time. Beat well after each addition until the mixture is fluffy.
  4. Fold in the mashed bananas along with the vanilla extract.
  5. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this to the wet mixture, mixing until just combined.
  6. In another bowl, combine brown sugar, oats, flour, and cinnamon for the crumb topping.
  7. Gently fold the batter into a greased loaf pan, evenly spreading it, and then sprinkle the crumb topping on top.
Baking
  1. Bake in the preheated oven for about 55-65 minutes, or until a toothpick inserted in the center comes out clean.
  2. Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

For health variations, you can use whole wheat flour instead of all-purpose flour and coconut sugar instead of brown sugar. Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
