Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, beat the softened cream cheese and butter together until smooth and creamy.
- Gradually incorporate the sugar, followed by the eggs one at a time. Beat well after each addition until the mixture is fluffy.
- Fold in the mashed bananas along with the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this to the wet mixture, mixing until just combined.
- In another bowl, combine brown sugar, oats, flour, and cinnamon for the crumb topping.
- Gently fold the batter into a greased loaf pan, evenly spreading it, and then sprinkle the crumb topping on top.
Baking
- Bake in the preheated oven for about 55-65 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
For health variations, you can use whole wheat flour instead of all-purpose flour and coconut sugar instead of brown sugar. Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
