  1. Start by pitting the Medjool dates if not already done. Carefully slice them down the middle without cutting all the way through, creating a pocket. Set aside.
  2. In a bowl, combine softened cream cheese, chopped dried cranberries, and chopped pecans. Mix until well combined. If you enjoy added sweetness, drizzle in your choice of honey or maple syrup, and add a pinch of salt to balance the flavors.
  3. Using a small spoon or your fingers, carefully stuff each date pocket with the cream cheese mixture. Ensure you fill them generously, as they’ll be delectable!
  4. For an even better taste experience, let the stuffed dates chill in the refrigerator for at least 30 minutes. This will help set the filling and make them easier to slice (if desired).
