Preparation
- Preheat your oven to 375°F (190°C).
- Rinse the whole chicken under cool water and pat it dry with paper towels.
- In a small bowl, mix the olive oil, Dijon mustard, salt, and pepper, then rub this mixture all over the chicken.
Cranberry Mixture
- In another bowl, combine the fresh cranberries with maple syrup and stir until well-coated.
Stuffing and Roasting
- Place the cranberry mixture inside the cavity of the chicken.
- Transfer the chicken to a roasting pan, breast side up.
- Roast the chicken for about 1 hour and 20 minutes, basting occasionally with the juices, until the internal temperature reaches 165°F (74°C).
- Once fully cooked, remove the chicken from the oven and allow it to rest for about 10 minutes.
Serving
- Garnish with fresh rosemary or thyme and serve your amazing Cranberry Maple Roast Chicken.
