Ingredients

Main Ingredients
  • 1 whole whole chicken (3 to 4 pounds)
  • 1 cup fresh or frozen cranberries
  • 0.5 cup maple syrup
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh herbs (e.g., thyme or rosemary) for garnish

Method

Cooking Process
  1. Preheat your oven to 375°F (190°C).
  2. Pat the chicken dry with paper towels and place it in a roasting pan.
  3. In a bowl, combine maple syrup, olive oil, apple cider vinegar, minced garlic, salt, and pepper. Whisk until well blended.
  4. Scatter cranberries around the chicken in the roasting pan.
  5. Slather the glaze all over the chicken, making sure it’s well-coated.
  6. Roast in the oven for about 1.5 hours or until the internal temperature reaches 165°F (75°C), basting the chicken every 20-30 minutes with the pan juices.
  7. Let the chicken rest for about 10-15 minutes before carving and garnish with fresh herbs.

Notes

For substitutions, try orange juice instead of apple cider vinegar or honey in place of maple syrup. Ensure proper oven preheating to achieve crispy skin. Leftovers can be stored in an airtight container in the refrigerator for 3-4 days or in the freezer for 2-3 months.
