  • 3-4 lbs beef roast (such as chuck or brisket) Choose well-marbled cuts for best results.
  • 1 cup cranberry sauce Store-bought or homemade.
  • 1/2 cup balsamic vinegar
  • 2 cloves garlic, minced
  • Salt and pepper, to taste For seasoning.
  • Fresh rosemary or thyme, for garnish

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Pat the beef roast dry with paper towels and rub generously with salt and pepper.
  3. Heat oil in a large skillet over medium-high heat and sear the roast on all sides for 2-3 minutes until browned.
  4. In a mixing bowl, combine cranberry sauce, balsamic vinegar, and minced garlic.
  5. Place the seared beef in a roasting pan and pour the cranberry balsamic mixture over it, ensuring it's well-coated. Cover with aluminum foil.
Roasting
  1. Roast in the preheated oven for about 2-3 hours, or until the internal temperature reaches your desired doneness (145°F for medium-rare). Baste with the sauce every hour.
  2. Once done, remove the roast from the oven and let it rest for at least 15 minutes before slicing.
  3. Garnish with fresh herbs and serve with your favorite sides.

Notes

For best results, opt for well-marbled cuts, customize the sauce to your preference, and use a meat thermometer to avoid overcooking. Store leftovers in an airtight container for up to 3-4 days or freeze for up to 3 months.
