Preparation
- Preheat your oven to 350°F (175°C).
- Pat the beef roast dry with paper towels and rub generously with salt and pepper.
- Heat oil in a large skillet over medium-high heat and sear the roast on all sides for 2-3 minutes until browned.
- In a mixing bowl, combine cranberry sauce, balsamic vinegar, and minced garlic.
- Place the seared beef in a roasting pan and pour the cranberry balsamic mixture over it, ensuring it's well-coated. Cover with aluminum foil.
Roasting
- Roast in the preheated oven for about 2-3 hours, or until the internal temperature reaches your desired doneness (145°F for medium-rare). Baste with the sauce every hour.
- Once done, remove the roast from the oven and let it rest for at least 15 minutes before slicing.
- Garnish with fresh herbs and serve with your favorite sides.
