Main Ingredients
  • 4 large large potatoes Choose starchy potatoes, like Russets.
  • 2 cups cooked, shredded chicken Use leftover roasted chicken or store-bought rotisserie chicken.
  • 1 packet ranch seasoning mix
  • 8 oz cream cheese Softened
  • 1 cup shredded cheddar cheese Divide for stuffing and topping.
  • 1/2 cup cooked turkey bacon Crumble Halal-friendly.
  • 1/4 cup green onions Chopped
  • Salt and pepper To taste

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes thoroughly and dry them. Prick each potato with a fork.
Baking Potatoes
  1. Place the potatoes on the oven rack and bake for about 45-60 minutes until tender.
Prepare Filling
  1. In a mixing bowl, combine shredded chicken, ranch seasoning, cream cheese, half of the cheddar cheese, turkey bacon, and green onions. Mix well.
Stuffing Potatoes
  1. Once baked, cut a slit in each potato, fluff the insides with a fork, and season with salt and pepper.
  2. Spoon the Crack Chicken mixture into each potato.
Final Baking
  1. Sprinkle remaining cheddar cheese on top of each stuffed potato and bake again for 10-15 minutes until cheese is melted.
Serving
  1. Let them cool slightly before serving and garnish with extra green onions if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for 2 months. Reheat in a preheated oven at 350°F (175°C) for 20-25 minutes.
