Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 garlic cloves minced
  • 3 medium carrots sliced
  • 2 celery stalks diced
  • 1 bell pepper chopped
  • 5 cups vegetable broth
  • 1 can 15 oz diced tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions
 

  • Heat the Olive Oil: In a large pot, heat the olive oil over medium heat. Once hot, add the diced onion and sauté until translucent, about 5 minutes.
  • Sauté the Garlic: Add the minced garlic, stirring frequently to avoid burning, for about 30 seconds.
  • Add Vegetables: Toss in the sliced carrots, diced celery, and chopped bell pepper. Sauté for about 5 minutes until they start to soften.
  • Combine the Broth and Tomatoes: Pour in the vegetable broth and add the canned diced tomatoes. Stir well to combine.
  • Seasoning the Soup: Sprinkle in the dried basil and oregano, along with salt and pepper to taste. Stir to incorporate all the flavors.
  • Simmer: Bring everything to a gentle boil, reduce the heat, and let it simmer for about 15-20 minutes until the veggies are tender.
