Ingredients

  • 1 lb ground beef (use Halal-certified)
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes (with juices)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups beef broth (Halal-certified)
Spices and seasonings
  • 1 tbsp chili powder
  • 1 tsp cumin
  • to taste Salt and pepper

Method
 

Preparation
  1. In a skillet over medium heat, brown the ground beef until it’s completely cooked through. Drain any excess fat and set aside.
  2. Transfer the browned beef to the crockpot. Add in the chopped onion, minced garlic, black beans, kidney beans, corn, diced tomatoes, and beef broth.
  3. Sprinkle in the chili powder, cumin, salt, and pepper. Mix everything together lovingly, ensuring all ingredients are well combined.
Cooking
  1. Set your crockpot to low and let it cook for 6-8 hours, or on high for 3-4 hours. The longer it cooks, the more flavor it develops!
Serving
  1. Once ready, give the soup a final stir and serve it hot with your favorite toppings.

Notes

Substitutions: You can substitute ground beef with ground turkey or chicken for a lighter option. For maximum flavor, let it simmer longer when cooking on low. Drain and rinse canned beans to remove excess sodium.
