Preparation
- Start by rinsing the wild rice under cold water to remove any debris.
- In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened.
- Stir in the minced garlic and sliced mushrooms. Cook for another 3-5 minutes until the mushrooms are tender and the garlic is fragrant.
- Add the rinsed wild rice and diced butternut squash to the pot, stirring well.
- Carefully add the vegetable broth to the pot and stir in the dried thyme, dried sage, salt, and pepper. Bring the mixture to a boil.
- Once boiling, reduce the heat to low. Cover the pot and let it simmer for 30-35 minutes or until the wild rice is cooked and tender.
- Taste and adjust seasoning as needed. Serve hot, garnished with chopped parsley for a fresh touch!
Notes
Feel free to swap the butternut squash for sweet potatoes or zucchini. Store leftovers in an airtight container for up to 4 days or freeze for up to 3 months.
