  • 1 cup wild rice Rinsed before use
  • 1 tablespoon olive oil For sautéing

  • 1 cup butternut squash, diced You can substitute with sweet potatoes or zucchini
  • 1 teaspoon dried thyme Adds herbal flavor
  • 1 teaspoon dried sage Enhances the autumn flavor

  • Chopped parsley for garnish Adds freshness to the soup

Method
 

Preparation
  1. Start by rinsing the wild rice under cold water to remove any debris.
  2. In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened.
  3. Stir in the minced garlic and sliced mushrooms. Cook for another 3-5 minutes until the mushrooms are tender and the garlic is fragrant.
  4. Add the rinsed wild rice and diced butternut squash to the pot, stirring well.
  5. Carefully add the vegetable broth to the pot and stir in the dried thyme, dried sage, salt, and pepper. Bring the mixture to a boil.
  6. Once boiling, reduce the heat to low. Cover the pot and let it simmer for 30-35 minutes or until the wild rice is cooked and tender.
  7. Taste and adjust seasoning as needed. Serve hot, garnished with chopped parsley for a fresh touch!

Notes

Feel free to swap the butternut squash for sweet potatoes or zucchini. Store leftovers in an airtight container for up to 4 days or freeze for up to 3 months.
