Ingredients
  

Meat Ingredients
  • 1 lb ground beef (Halal)
  • 1/2 lb Halal chorizo
Vegetable Ingredients
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
Cheese Ingredients
  • 1 block (8 oz) cream cheese
  • 2 cups shredded cheddar cheese
Other Ingredients
  • 1 cup milk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • to taste salt
  • to taste pepper

Method
 

Cooking the Meats
  1. In a large skillet over medium heat, brown the ground beef and Halal chorizo until fully cooked. Make sure to crumble the meat as it cooks for an even texture throughout the dip.
Adding Veggies
  1. Once the meat is cooked through, drain any excess fat and add in the black beans, corn, and diced tomatoes with green chilies. Stir everything together and let it simmer for 5 minutes.
Incorporating Creaminess
  1. Reduce the heat to low, and mix in the cream cheese, followed by the cheddar cheese. Stir until melted and creamy, blending all flavors beautifully.
Adjusting Consistency
  1. Pour in the milk gradually until you reach your desired consistency. If it’s too thick, add a little more milk.
Seasoning
  1. Sprinkle in the garlic powder, onion powder, salt, and pepper. Taste and adjust seasonings as needed.
Serving
  1. Transfer your Cowboy Queso Dip to a serving bowl and enjoy warm with chips or veggies. The gooey, cheesy goodness is best served immediately!

Notes

For a vegetarian version, replace the meats with additional black beans or grilled vegetables. Store leftovers in an airtight container for 3-4 days; reheat before serving. Can be frozen for up to 2 months but may lose some creaminess upon thawing.
