Ingredients
  

Meatloaf Ingredients
  • 1 pound Ground beef Use lean ground beef for best results.
  • 1 cup Bread crumbs Regular or seasoned bread crumbs can be used.
  • 2 Eggs, beaten
  • 1/4 cup Milk Use whole milk for creaminess.
  • 1 small Onion, finely chopped Sautéed for added sweetness.
  • 1 teaspoon Garlic powder
  • to taste Salt and pepper
Potato Ingredients
  • 4 cups Potatoes, peeled and sliced Use russet or Yukon gold for best results.
  • 1/2 cup Butter, melted For richness.
  • 1/2 cup Sour cream Adds creaminess.
  • 1 cup Cheddar cheese, shredded More cheese can be added on top.
  • for garnish Chives Freshly chopped for serving.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the ground beef, bread crumbs, beaten eggs, milk, chopped onion, garlic powder, salt, and pepper. Mix well until fully combined.
  3. In a separate bowl, mix the sliced potatoes with melted butter and sour cream. Season with salt and pepper to taste.
Assembly
  1. In a greased baking dish, layer half of the potato mixture at the bottom.
  2. Form the meatloaf mixture into a loaf shape and place it on top of the potato layer in the baking dish.
  3. Cover the meatloaf with the remaining potato mixture, ensuring it’s evenly spread.
  4. Top with shredded cheddar cheese, and sprinkle some extra salt and pepper if desired.
Cooking
  1. Bake in the preheated oven for about 30-35 minutes, or until the meatloaf is cooked through and the potatoes are golden and bubbly.
  2. Remove from the oven and let it cool for a few minutes. Garnish with chopped chives before serving.

Notes

For added flavor, sauté onions before adding to the meatloaf mixture. Different cheeses can also be used for a unique twist. Store leftovers in an airtight container for up to 3-4 days in the fridge.
