Ingredients
  

Main Ingredients
  • 1 lb ground beef Can substitute with ground turkey or chicken.
  • 1 can (10.5 oz) cream of mushroom soup Can substitute with cream of chicken or a homemade creamy sauce.
  • 1 can (15 oz) corn Drained.
  • 1 cup shredded cheese Cheddar or your favorite.
  • 1 bag (32 oz) frozen tater tots About 32 oz.
  • 1 packet taco seasoning
  • to taste Salt and pepper
Optional Garnishes
  • chopped green onions For topping.
  • cilantro For topping.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef over medium heat until it’s browned. Drain any excess fat if necessary.
  3. Add the cream of mushroom soup, taco seasoning, drained corn, and half of the cheese to the skillet. Stir everything together until well combined. Season with salt and pepper to taste.
  4. Transfer the beef mixture to a greased casserole dish, spreading it evenly across the bottom. Top it with the frozen tater tots in a single layer.
Baking
  1. Place the casserole in the preheated oven and bake for 25-30 minutes, or until the tater tots are golden brown and crispy.
  2. Remove the casserole from the oven and sprinkle the remaining cheese on top. Return it to the oven for an additional 5 minutes, or until the cheese is melted.
Serving
  1. Let it cool for a few minutes before serving. Garnish with chopped green onions or cilantro if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze for up to 3 months. Reheat at 350°F (175°C) for 20-30 minutes, covered with foil.
