Preparation
- Pat the chicken breasts dry with a paper towel and season both sides generously with salt and pepper.
Cooking
- In a large skillet, melt half of the butter over medium-high heat. Add the chicken breasts and cook for 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining butter and minced garlic. Sauté for about 1 minute until fragrant.
- Stir in the chopped parsley, thyme, and lemon juice.
- Return the chicken to the skillet and spoon the buttery garlic sauce generously over it. Allow the chicken to simmer for a couple of minutes to soak in the flavor.
Serving
- Serve the Cowboy Butter Chicken hot, garnished with extra parsley if desired. Pair it with rice, pasta, or veggies for a complete meal.
Notes
Store leftovers in an airtight container for up to 3 days. Reheat gently with chicken broth or water to maintain moisture. Portions can be frozen for up to 3 months.
