  • 1 cup cottage cheese Use low-fat or regular, based on preference.
  • 4 large eggs
  • 1 cup fresh spinach, chopped Can substitute with frozen spinach if needed.
  • 1/2 cup shredded cheese Cheddar or mozzarella works well.
Seasonings
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • to taste Salt and pepper
  • optional herbs like dill or basil For added flavor.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together the eggs until fully blended.
  3. Add the cottage cheese, chopped spinach, shredded cheese, garlic powder, onion powder, salt, and pepper. Mix until combined.
  4. Grease a pie dish or an 8-inch square baking dish with cooking spray or a light coat of oil to prevent sticking.
  5. Pour the egg and cheese mixture into the greased dish, spreading it out evenly.
Cooking
  1. Place the baking dish in the preheated oven and bake for about 30-35 minutes, or until the quiche is set and the top is lightly golden.
  2. Allow the quiche to cool for a few minutes before slicing. Serve warm or at room temperature.

Notes

For leftovers, store in an airtight container in the refrigerator for up to 3-4 days. Reheat in the microwave for 1-2 minutes or in an oven at 350°F until heated through. Can be frozen for up to two months, wrapped tightly in plastic wrap.
