Preparation
- Preheat the oven to 350°F (175°C).
- In a large bowl, whisk together the eggs until fully blended.
- Add the cottage cheese, chopped spinach, shredded cheese, garlic powder, onion powder, salt, and pepper. Mix until combined.
- Grease a pie dish or an 8-inch square baking dish with cooking spray or a light coat of oil to prevent sticking.
- Pour the egg and cheese mixture into the greased dish, spreading it out evenly.
Cooking
- Place the baking dish in the preheated oven and bake for about 30-35 minutes, or until the quiche is set and the top is lightly golden.
- Allow the quiche to cool for a few minutes before slicing. Serve warm or at room temperature.
Notes
For leftovers, store in an airtight container in the refrigerator for up to 3-4 days. Reheat in the microwave for 1-2 minutes or in an oven at 350°F until heated through. Can be frozen for up to two months, wrapped tightly in plastic wrap.
