Main Ingredients
  • 1 cup cottage cheese Make sure it's well-blended
  • 1/2 cup almond flour Can substitute with oat flour or gluten-free blend
  • 1/2 cup cocoa powder
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • a pinch salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease an 8×8 inch baking dish or line it with parchment paper.
  3. In a large mixing bowl, combine the cottage cheese, honey or maple syrup, melted coconut oil, eggs, and vanilla extract. Blend until smooth and creamy.
  4. In another bowl, mix together almond flour, cocoa powder, baking powder, and a pinch of salt.
  5. Gradually add the dry ingredients into the wet mixture, stirring until fully incorporated.
  6. Pour the batter into the prepared baking dish and spread it evenly.
  7. Bake in the preheated oven for about 30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Remove the brownies from the oven and let them cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Once cooled, slice into squares and enjoy.

Notes

Store brownies in an airtight container in the fridge for up to a week, or freeze for about three months. Reheat in the microwave or oven to enjoy.
