Preparation
- Preheat your oven to 350°F (175°C).
- Grease an 8×8 inch baking dish or line it with parchment paper.
- In a large mixing bowl, combine the cottage cheese, honey or maple syrup, melted coconut oil, eggs, and vanilla extract. Blend until smooth and creamy.
- In another bowl, mix together almond flour, cocoa powder, baking powder, and a pinch of salt.
- Gradually add the dry ingredients into the wet mixture, stirring until fully incorporated.
- Pour the batter into the prepared baking dish and spread it evenly.
- Bake in the preheated oven for about 30 minutes, or until a toothpick inserted in the center comes out clean.
- Remove the brownies from the oven and let them cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Once cooled, slice into squares and enjoy.
Notes
Store brownies in an airtight container in the fridge for up to a week, or freeze for about three months. Reheat in the microwave or oven to enjoy.
