Ingredients
  

For the flatbread
  • 1 piece flatbread store-bought or homemade
  • 1 cup cottage cheese preferably fresh
  • ½ cup tomato sauce
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Place your flatbread on a baking sheet lined with parchment paper.
Mixing Ingredients
  1. In a mixing bowl, combine the cottage cheese with salt, pepper, and Italian seasoning. Stir well.
  2. Layer the tomato sauce evenly across the flatbread, leaving a small border around the edges.
  3. Spoon the cottage cheese mixture over the tomato sauce and spread it out.
  4. Sprinkle shredded mozzarella cheese on top and add your chosen toppings.
  5. Drizzle olive oil over the top for extra richness.
Baking
  1. Bake for about 15-20 minutes, or until the cheese is bubbling and the edges of the flatbread are golden brown.
  2. Remove from the oven, slice, and serve hot.

Notes

For a gluten-free version, use gluten-free flatbread. Ensure toppings are not too wet to prevent sogginess. Store leftovers in an airtight container for up to 3 days, or freeze for about a month.
