Preparation
- Preheat the oven to 350°F (175°C) and grease a round cake pan or individual ramekins with a touch of butter or cooking spray.
- In a mixing bowl, add the cottage cheese and blend it until smooth—you want a creamy consistency that blends seamlessly with the other ingredients.
- In another bowl, whisk together the sugar, all-purpose flour, cocoa powder, baking powder, and a pinch of salt.
- Add the smooth cottage cheese mixture, eggs, milk, and vanilla extract to the dry ingredients. Stir until fully combined, but don’t overmix!
- Pour the mixture into your greased cake pan or ramekins. Bake in the preheated oven for 20-25 minutes, or until the edges are set but the center is still slightly soft and jiggly.
- Let the cake cool for a few minutes before serving.
- When you cut into it, watch that luscious center flow out—it’s the most satisfying part!
Notes
For an added touch, serve with a scoop of vanilla ice cream or a dollop of whipped cream. Allow cooling before cutting for best results. If using ricotta instead of cottage cheese, blend well for a smoother texture.
