Preparation
  1. Preheat the oven to 350°F (175°C) and grease a round cake pan or individual ramekins with a touch of butter or cooking spray.
  2. In a mixing bowl, add the cottage cheese and blend it until smooth—you want a creamy consistency that blends seamlessly with the other ingredients.
  3. In another bowl, whisk together the sugar, all-purpose flour, cocoa powder, baking powder, and a pinch of salt.
  4. Add the smooth cottage cheese mixture, eggs, milk, and vanilla extract to the dry ingredients. Stir until fully combined, but don’t overmix!
  5. Pour the mixture into your greased cake pan or ramekins. Bake in the preheated oven for 20-25 minutes, or until the edges are set but the center is still slightly soft and jiggly.
  6. Let the cake cool for a few minutes before serving.
  7. When you cut into it, watch that luscious center flow out—it’s the most satisfying part!

Notes

For an added touch, serve with a scoop of vanilla ice cream or a dollop of whipped cream. Allow cooling before cutting for best results. If using ricotta instead of cottage cheese, blend well for a smoother texture.
